Freedom to bake!

Finally my first post on baking! About time right? I just started a new job and have off the rest of the weekend (thankfully b/c I have an exam that'll kick my ass this Wed) so I figured I could finally get something up here!  I've been meaning to make oatmeal raisin cookies for soo long. I love them, but I wanted to put a new twist on them. Adding white-chocolate chips! (not pictured, I forgot and threw the package oops!). Anyhow, they are currently in the oven, and I can't wait to eat them! I will post another picture after.  I think they are gonna be awesome! Enjoy your weekends!! :)

Thick, Chewy Oatmeal Raisin Cookies
The last trick to getting a really thick, chewy cookie is to chill the dough before you bake it. You can scoop it and then chill it, or, if you’re like us, scoop it, freeze them and store them in a freezer bag so you can bake them as you wish. I find they’re always thicker when baked from the cold — only a couple extra minutes baking is needed.
This is a half recipe. It makes a couple dozen standard-size cookies. (I get more because I make them tinier.) I always feel like I’m swimming in cookies when I make the full volume, but if you’re feeding a crowd, go ahead and double it.
1/2 cup (1 stick or 4 ounces) butter, softened
2/3 cup light brown sugar, packed
1 egg
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt (I often use a half teaspoon, but I like more salt in my baked goods)
1 1/2 cups rolled oats
3/4 cup raisins
1/2 cup walnuts, chopped (optional)
Preheat oven to 350°F (175°C).
In a large bowl, cream together the butter, brown sugar, egg and vanilla until smooth. In a separate bowl, whisk the flour, baking soda, cinnamon and salt together. Stir this into the butter/sugar mixture. Stir in the oats, raisins and walnuts, if using them.
At this point you can either chill the dough for a bit in the fridge and then scoop it, or scoop the cookies onto a sheet and then chill the whole tray before baking them. You could also bake them right away, if you’re impatient, but I do find that they end up slighly less thick.
The cookies should be two inches apart on a parchment-lined baking sheet. Bake them for 10 to 12 minutes (your baking time will vary, depending on your oven and how cold the cookies were going in), taking them out when golden at the edges but still a little undercooked-looking on top. Let them sit on the hot baking sheet for five minutes before transferring them to a rack to cool.

busy girl!

Dis girl has been living a crazy life! I feel like all I do is eat, sleep and breathe Respiratory and Massage Therapies.  Man oh Man! I cannot wait to graduate.  Sooo much to do but here I am blogging :).  I haven't updated in a long time and although no one really reads this...I feel its necessary to post.  I got a new tv! I am finally updated into flatscreen world! Also, I got a new camera so once I have the time to cook/bake (and I NEED to make time) I will be posting some pretty pretty pictures.  And of my apron, cause I think its the cutest thing everrr.  I guess other than school and work, I've moved onto Roses are Red by James Patterson; Watched  a few good flicks including Despicable Me, now watching The Social Network. And enjoying the 50 degree heat wave WI is offering me! Oh, and I got into Modern Family, man I've been missing out.  I love that show! I got a gym membership recently (aka today) finally...and I need to use it.  Anyone have any motivating words for me? I need help motivating myself!! Ok that is all, Good Day!

Music!

So today I checked out a new band called Someone Still Loves You Boris Yeltsin http://www.morawk.com/boris/.  Immediately sparks flew.  It was love. Love at first hear. Check 'em out!! I would suggest "Think I Wanna Die" first! Enjoy!  Also, I watched the movie Charlie St. Cloud.  I must say I was not impressed! I don't really think Zac Efron is that hot, and the entire time I was picking out mistakes in the movie.  My roommate was just yelling "take your shirt off."  He did finally, by the way.  However, we watched Easy A the other day, and it was so good! Love Emma Stone!! Ok, thats all for now!

Blog Virgin

I've been fighting my urge to start a blog for some time now.  It started with a food blog addiction.  I have an outrageous amount of food blogs I try to follow, TRY.  I am not very good at it, because I stay pretty busy.  Why exactly am I doing this again? I have to have something to help me procrastinate schoolwork! I got into Facebook's Cafe World for a while, then I tried out Catch a Killer (I am currently waiting for new cases to load...) and now this.  There has to be someone out there that is interested in what I'm saying, one can dream anyway.  I like the idea of having all the things I like organized in one spot so this is very exciting to me.  I am really getting into organizing, it feels so refreshing.  Well here she is, Daisies, Olive Oil and Chocolates. She's my new baby, hope you enjoy my random thoughts and postings! I just have to say though, the idea of people "following" me seems a little creepy.  Then again, I am kind of a paranoid person (must be all the crime shows and lifetime movies growing up).
